Description:
The disc is driven by a geared motor with infinitely variable
electronic speed control by means of a frequency converter, torque
transmission via a friction wheel system to the inside of the outer
blank cover; this ensures an even running characteristic.
The necessary heating plates are installed in the blank and are
supplied with electrical voltage via a special slip ring system. The
heating systems are controlled fully electronically and wear-free by a
so-called thyristor control. With this control system, infinitely
variable regulation of the heating output in the range of 0% to 100%
is possible. This allows the system to be precisely adjusted to the
product to be baked; in addition, a remarkable energy saving is also
achieved.
The following controls, each with a separate adjuster, scale 0 – 10,
adjustable, are installed: Bottom heat centrally via a common
control.
The same electronic system is also used to control the top heat, which
can be designed in several stages depending on the size of the system.
Level 1 = 1/3 power,
Level 2 = 2/3 power or both levels together for full heating power.
The heating system of the top heat consists of infrared ceramic
heaters that are arranged in a semicircle in a kind of tunnel.
These infrared ceramic emitters cause an increased penetration of heat
radiation into the baked goods due to their radiation characteristics.
This means that not only does the surface heat up, but also cooking
from the inside out as a result of the depth effect and the targeted
directivity.
The necessary control cabinet is mounted on a console on the side of
the system, in stainless steel. The front door houses all the
controls, clearly arranged. The control cabinet door can only be
opened with a special control cabinet key. The control cabinet
contains the necessary fuse and switching devices.
